Hi Sirene

I live in california and I wanted to know if there is somewhere I could buy the haitian black mushrooms for the rice with djon djon.

My husband is from ahiti, and I know how to cook it but I can't find any mushrooms here

HR 's AK 100[/]

Ingredients
3-4 cups of water
1 cup Corn Flour (AK 100)
Anis seed
Cinnamon Stick
Malaget leave
Sugar to taste or Gro Sirop (Sirop batterie)

Preparation
Boil the corn flour (just like mais moulin) with all the spices.You can either eat it like that or add evaporated milk.

Ingredients
Corn on the Cob
Anis seed
Cinnamon Stick
Malaget leave
Sugar to taste or Gro Sirop (Sirop batterie)

Preparation
Using corn on the Cob, grate it. (In Haiti, they remove all the corn from the cob and they pound in the wooden pounder).

Then you cover it with water.

Leave it to soak in water overnight.

Strain it the next morning.

Using the same water, boil it until it becomes thick.

Rhum punch

Rhum punches can be based on any fruit juice.

A popular one is made from mixed tropical fruits, with rhum added and nutmeg grated over the top. The classic rhum punch has more bite.

It can be made in any quantity using the traditional ratios.

1 parts sour (fresh lime juice, not that horrible bottled stuff!)
2 parts sweet (sugar syrup or Grenadine [pomegranate syrup])
3 parts strong (rum — in this case, dark rum is justified)
4 parts weak (water, soda water or orange or other light fruit juice).

If the "parts" are ounces, it’s 10 ounces total, and is served in a tall glass with ice. Garnish with a lime or other fruit slice and grated nutmeg.

Serves one
