I am an anthropologist who works in Haiti - I am equally in love with this stuff!

When I lived there i can recall watching the women making it with habenero peppers, very spicy, as well as a cube of chicken broth stuff vinegar, but I thought it was apple cider vinegar, salt and pepper.

It was the base for a plate of fried pork and plantains, oooh baby, yummy.

Get Yourself Some Hot Peppers-i Forget What They

by on 1/21

Get yourself some hot peppers-I forget what they call them- they look like small bell peppers.

Cut them into small peices and put them in an empty mayo jar, seeds and all. Add vinegar and coleslaw- shredded cabbage you can find at the super market.

I add a packet of sazon and pepper to add a real kick to it. The key is to let it marinate! I know because I just made a jar myself, and it is the BOMB!!! Let me know how it turns out!

Get the hottest fresh peppers you can find of various colors (a farmers market is your best bet) shred them like you would for a coleslaw, place them in a mason jar and fill with white vinegar,a half inch over the pepper.

Store for about 2 weeks on a shelf than enjoy.
