This is my Mother-in-law's recipe:
Haitian Banane Grage (Haitian Grated Banana Porridge)
4 very GREEN bananas - washed
4-5 cups water
1 tsp nutmeg
2 tsps vanilla extract
1 can (12 oz) evaporated milk
2 cups sugar
Dice the bananas WITH THE SKIN ON into very small pieces and puree in a blender.
The puree will turn into murky gray.Add banana puree to a saucepan and add remaining ingrediants.
Cook over med heat--bananas will turn PINK! Yes, a very pretty pink! Drink warm or serve in bowls like oatmeal.
