NOOOO!! Poisson Gros Sel is made with snapper not King Fish and this is not how you make it either! It has nothing to do with vinegar.
A real poisson gros sel is made with yellow tale snapper, marinated in a marinade made of sour oranges or lemons, garlic, sea salt, pepper (similar to Mojo).
Then you broil it in the oven in a shallow pan with onions, carrots, green plantains...
etc. You can probably find a more detailed recipe on-line!!

Chantale Mtl, Canada Thank you.

Does anyone have a different recipe for Poisson Gros Sel. I was told to put a king fish in a large pan with a lot of salt, water and a little venegar, and to let it marinate for three days.
I need a few more details like how much salt, how much vinegar?? Has anyone heard of this recipe?
thanks
