haitian oxtail is cook lik any other haitian meat except for conch and fish.
basicaly you clean the meat with lemon and salt, than u boil water wait until extra hot and than pour water on meat to take out excess fat and blood.
Than u drain the water than you season the meat with blended spice of green onions, garlic, and maggie,and place on stove with about 3 cups of water amd a teaspoon of oil to boil for about an hour or two. until meat is tender.when meat is cook you make yo sauces.
