Sauce For Haitian Beans And Rice

ok Ill try to explain the best I can in English (im French speaking)...

If Im deep frying the meat, after cooking it, I put some water in the pan and scrape the meat off the pan. Then I add some tomato paste, salt, a lot of thyme and bay leaf.

Some people will add hot peppers in the sauce.
