MESHI or STUFFED CABBAGE LEAVES
[i]This is something that I have seen a member of my family cook but I cannot remember the name of it in Haiti.
I found this recipe while surfing the Web looking for recipes.
I think it is called Meshi and is probably an Arabic dish.[i]
Ingredients
2 lbs. cabbage (light ones) 4 large cloves garlic
1 c. uncooked rice 2 tsp. fresh mint
1 lb. minced beef 1/4 c. lemon juice
salt and pepper to taste 2 oz. magarine
Preparation
1. Core and parboil cabbage leaves until limp and easy to roll.
2. Place in a colander and separate leaves.
3. Slice each leaf in half on ribs.
Leaves should be about 4'x6'.
4. Mix rice, magarine, meat and seasonings.
5. Place 1 tbsp.
rice mixture along rib and spread out to the length of leaf.
6. Roll as for jelly roll.
7. Gently squeeze each roll when placing in pan.
8. Arrange in compact rows in pot.
9. Sprinkle crushed garlic between rolls and tbsp.
salt.
10. Cover pot with water to the cabbage level.
Put a tight lid on pot and cook on medium fire for about 15-20 min.
11. Mash 1clove of garlic with mint and a little salt.
Add lemon juice and pour over the entire top of cabbage and simmer for 20 min. or until rice is done.
