Hi! I believe that the fish he is refering to is Red Snapper.
Most Haitians use regular cooking (veg. oil) for all dishes.
Olive oil can be very expensive, and I honestly don't know of any authentic haitian cooks who use olive oil. Since I am american born Haitian, I try to use oils that is less saturated, but it is not a requirement, in fact haitian cooking uses a great deal of oil and it would not be economical to use olive oil in every dish particularly like Griot`( Fried pork).
